As we start to possibly entertain and gather again, this recipe for Baked Brie with Apricot and Almonds is one of my favorites – and it couldn’t get easier. I typically get these ingredients when I stop into Trader Joe’s because everything is so affordable – you can usually get everything for under $12
INGREDIENTS
These prices are approximate
Trader Joe’s Brie, preferably DOUBLE creme – about $3.50 (done by weight)
Trader Joe’s raw sliced almonds – $2.50
Trader Joe’s organic reduced sugar apricot preserves – $3
Trader Joe’s water crackers – $1.30
Trader Joe’s sourdough baguette – $1.99
DIRECTIONS
Unwrap Brie and put into a baking dish. Make sure the baking dish has edges, as the brie will spread when it melts
Top with 3-4 generous tablespoons of the apricot preserves
Sprinkle a handful of sliced almonds on top
Cover with foil
Bake at 400 degrees for about 12-14 minutes
We actually ended up eating this for dinner last night! We ate it with apples which I thought was even better than the water crackers. Brie is one of those things you can find marked down in the cheese clearance section at Fred Meyer pretty often! You can also buy it pretty affordable at Costco – but it’s a much bigger wheel. You can experiment with other preserves – for example, we’ve also made this with fig jam and an orange marmalade!
