How is your morning going? How about your week? Things are going pretty good around here but nothing exciting to talk about. Earlier this week I finished our personal/business taxes (thank goodness), we are working on refinancing our house (long overdue) and we have a long list of projects we want to get around the house – but it won’t stop raining (especially on the weekends). Such is life in the Northwest – I just remind myself I’m grateful for all the green – even if it is moss and mold (heehee).

Yesterday I went to Costco and stocked up on ingredients to make a bunch of freezer meals today. I had mentioned that I had picked up 80 pounds of Zaycon chicken this week. I have half of it cleaned and processed and today everything needs to make it into the freezer. I am using the book Fix, Freeze, Feast: The Delicious, Money-Saving Way to Feed Your Family and from it, I have about five or six freezer meals I want to make today, including Sweet Asian Chicken, Chicken Parmigiana, Chicken Curry, Chicken Cordon Bleu and Tequila-Lime Chicken. That’s my goal for today. It was also my goal for Monday, Tuesday and Wednesday. LOL. It’s been one of those weeks. 🙂 I’ll be blogging about the process, if I can get some decent photos and if I actually get it done. 🙂

Hi, Heather! Sometimes we want to get away, but just for a day or two and so it needs to be close and affordable. We’ve found a few places to stay in rentable beach houses and mountain cabins, and I was wondering if you could ask readers to help with contact info for Northwest getaway locations that might go for around $100 per night or so within a two-six hour drive from Oly, Tacoma or Seattle. I know there’s a place to look on Craig’s List, but was looking for some places with recommendations. Recently we rented a three bedroom beach house in Rockaway Beach OR (near Tilamook) for $100 a night. Sleeps 8 on 4 queen beds, plus lots of floor space! Alone or shared with another family, it’s uber affordable! Thanks!!!
