Like Watergate salad? Well that’s basically what this is – but I added blueberries because you can’t have the green without the blue! And I think it’s the perfect complement to the pineapple and pistachio flavor. My KIDS love this and I hope you do too.
Recipe from the Jell- Pistachio pudding box.
INGREDIENTS
1 can (20 oz) crushed pineapple, in juice, undrained
1 package (3.4 oz) JELL-O Pistachio flavor instant pudding
1.5 Cups thawed Cool Whip Whipped Topping
1 Cup Jet-Puffed miniature marshmallows
1-2 Cups fresh blueberries
Optional: 1/2 Cup chopped pecans (I left them out)
Optional: Garnish with lime?
HOW TO PREPARE
1.) In a large bowl, combine all ingredients (except the blueberries) and refrigerate for 1 hour.
2.) After the pudding has set up and right before you serve, sprinkle with fresh blueberries!

If I could eat pineapple, I would SO be making this! Any suggestions for substitutions? Can’t do anything acidic,so oranges are out too. 🙁
