Slow Cooker Salsa Verde Beef
This slow cooker salsa verde beef recipe apparently makes “the best tacos I’ve ever had,” per my handsome husband. He said this and I found myself slightly offended, and I replied, “But I’ve made you so many tacos. . . ” And he replied with a smile, “Well you made these, too.”
In the nearly 10 years I’ve been married to this man, he’s never complained, ever, about a meal I’ve made. At worse, he’ll just eat it and be done (bless him for that). He’s always complementary, even when I know he’s fibbing just to make me feel appreciated for cooking a meal. But I don’t think I’ve ever heard so many compliments about any particular recipe. Really. It was a hit.
So yes, I can pretty much plan on making this Slow Cooker Salsa Verde Beef recipe many times again, since now every other taco recipe I have up my sleeve will be compared to the “best taco recipe I’ve ever had,” declaration. They were really good, I agree. Even my kids had seconds.
I think this would be an wonderful recipe to make for a taco bar if you want to take it up a notch from the typical hamburger tacos. Taco bars are great ways to serve lots of people with a meal that allows them to adapt it with the toppings they like. Or make these into nachos for a party-size appetizer.
3-pound boneless rump or chuck roast, cut into 1.5 inch cubes
1/2 Cup diced onion
1 Tablespoon chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1 tsp salt
1 cup salsa verde (you know, salsa that is green)
I used mild, use whatever spice level you’d like
1 Tablespoon olive oil
HOW TO PREPARE
1.) Heat oil in a large skillet. Add beef cubes and brown all sides. Work in batches if you have to.
2.) Transfer meat to 5-quart slow cooker. Add onions to the drippings in the skillet and saute until they are slightly brown. Stir in the spices and cook for about one minute. Add the salsa and stir, scraping up any brown bits.
3.) Add this salsa, onion, seasoning mixture to the beef in the slow cooker. Cook on low for 6-8 hours or high for 4 hours. The meat should be very tender and shred easily when it’s stirred.
I didn’t stir mine much, so it stayed in cube form for the most part. We topped with lettuce, cheese, tomatoes, avocado and sour cream to make tacos. I would have added olives if I had them. I think it would taste great on a layer of chips and topped with nacho toppings.

I’m wondering as a fellow instant potter, if you’ve made this in it. If so, how long, or other adaptations in the IP? It’s sounds fab!
I have to share. We love these tacos. This week we had leftovers that I wanted to do something else with. I thought it would make a good chili. I found this recipe. http://www.theyummylife.com/steak_chili. I made a few minor adjustments based on our preferences and what I had in pantry (no beer, added extra chicken broth, chipotle diced tomatoes and extra beans threw in rest of the verde salsa that was left) and It was the best chili I have ever made. The meat was tender and really gave it the best flavor.
This post made me hungry. :-/
I made this today, yummy!!! I added more Verde sauce and served it like chili Verde in a bowl with tortillas on the side. We rip the tortillas into sections and scoop it. It was delicious!!!!

I use leftover steak and grilled onions from our weekend cookouts and I think it really adds more flavor. Great way to use up steak that might be a little tough the next day.

This recipe rocks! I thought I had a good recipe, but then I found this one and there is no turning back. DH was like yous – these are the best tacos! I have to agree. I have made them probably 4x plus and could eat them every day. The Salsa Verde was the key – thanks so much for posting – we absolutely love it!
Made this for dinner last night and it was a big hit! I will be making this again only larger quantities so I have some for another night. Thank you for this recipe.
My sister in law showed me how to make this awhile back and she had a sauce she put on top, it was mixture of mayonnaise and lime juice. Sauce should be kind of watery but this is one of my favorite dishes.
Hey since u were out of olives here is a secret.. My family lives olives but I admit I’m a little lazy at slicing them and the little cans if sliced olives are too spendy! Instead I buy the 2 large cans at Costco and scoop 1 cup portions into baggies and freeze. When ready to use I run them under hot water a few minutes to thaw.
I’d love to make this but am horrible knowing what the different kinds of beef are. FM sells a package of stew meat in the meat section …could i use this?

I think stew meat would be good, it might end up shredding a bit? But I don’t think that would be a bad thing. I bought a roast and just diced it.

I went to the meat guy at the grocery store and asked them to cube my chuck roast that I picked out. It made it easier and they just wrapped it up and I was set to go. Most places are happy to do this for customers. This recipe is awesome too!
I made this last night and my husband, who is a little picky about food, said these were the best tacos ever!
Made this tonight for dinner. It was so easy and delicious! My husband and I both really enjoyed it! Thanks for the recipe!
